People tell you, when your baby turns three months you feel a big difference. The truth is, with one-month-old baby J I was pretty sure they were just trying to be nice. Don't get me wrong - I couldn't be happier, but I was SUPER busy and couldn't imagine having time for myself ever again. Well, it turns out that sometimes people know what they talk about. Life has changed tremendously, but as babies grow both mom & babe become used to the change, get to know each other better, and yes, it makes a BIG difference.
Lately, baby J has been intercacting much more, which is a lot of fun for us. He even attemps to communicate his own way, with cute but non-understandable baby words. Hey, did you just say babu?! Bravoo!! And I've been able to have some time for myself, too. Attempting to go to the gym (yeah, right - trying counts!), shooting again, meeting with other grown ups, and even baking a little.
For a long time, I'd been craving brownies. So last weekend I tried this version, with hazelnuts. I was tempted to include nutella, but decided to keep it "light" this time. I know. I know...
We loved them, although some of the chocolate chips you see above, were suposed to go inside the batter. Sometimes I feel like I just kept my pregnant brain!
For this recipe, you'll need:
- 1 cup melted butter
- 2 cups sugar
- 4 eggs
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 3/4 cup baking cocoa
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chopped hazelnuts
- 1/4 chopped hazelnuts and 1/4 semisweet chcolate chips to spread
Preheat oven at 350°. Mix butter and sugar in a bowl until light and fluffy. Add the eggs, beating well after each addition. Add the vanilla. In another bowl, combine the flour, cocoa, baking powder and salt; then add the chopped hazelnuts. Gradually add this combination to butter mixture.
Spread into a greased 13-in. x 9-in. baking pan. Spread hazelnuts and chips. Bake for about 30 minutes, or until a toothpick comes out clean. Let cool on a wire rack. Enjoy!
